Last time this summer to be enjoying these, with fresh strawberries and bilberries anyway. A classic and a firm favorite of childhood desserts, but now I'm grown up enough to be making my own. Can you flip yours by tossing it up in the air? (My success rate is about 70% at the moment...)

5 dl milk
2 eggs
2 dl wheat flour
2 tbsp sugar
1 tsp salt

butter for frying

Mix all the ingredients, whisk so that there's no lumps of flour. Crepes are usually thinner than pancakes. If your crepes break on the pan, you can add flour to make the batter thicker. Melt about 1tsp butter and pour enough mix on the frying pan to cover the bottom. Fry both sides. Enjoy with jams, marmalades, whipped cream, vanilla ice-cream, fresh berries or make savory ones by filling them with meat or vegetables.
